This isn’t a recipe for steak but rather a guide of how to treat and handle the steak before and after cooking
Follow these simple rules and you’ll end up with a great steak
Often the steak you buy is vacuum packed so make sure you remove the steak from the pack as soon as you can. This will air the steak and remove the plastic scent and return its colour
Keep the steak out of the fridge and allow to get to room temperature. This way you’ll ensure an even cook and rare steaks won’t be cold in the middle
Season the steak with salt and pepper
Add only a small amount of oil to the pan and use a paper towel to remove as much oil as possible
Ensure your pan is as hot as possible before you add the steak. The closer the pan is too smoking, the better.
After cooking, cover in tin foil and let the steak rest for a few minutes
