Southern Fried Chicken always evokes very, very happy memories for me. I still picture sitting on sun bleached white sandy beaches in Corpus Christi, Texas and devouring freshly fried chicken while watching the sun set.
This recipe removes the need for a deep fryer
First of all you're going to marinade the chicken in the milk, eggs and water mixture for hopefully a few hours minumum. It's best overnight but if time is pressing you can do this one hour before. This step simply helps to tenderise the chicken and keep it moist during the cooking process.
Mix the flour, salt and pepper, cumin, cayenne, chilli, celery salt and thyme into a plastic bag and give a good shake
Preheat the oven to 180C
When ready to make, in a large frying pan add the oil and butter and bring to a medium heat.
Take a chicken piece out of the milk marinade and place into the flour mix, shake until coated well and then add into the pan. Repeat this process until the pan is almost full of chicken.
Do NOT throw the spare flour mixture away as we can use this to make a wonderful Creamy Bourbon Gravy
When the chicken has been nicely browned on one side (think golden brown) turn over to cook the other sides
When browned all over, transfer to a baking tray
Cook all the chicken pieces this way
Place the chicken into the oven and cook for another 25/30 minutes
Reserve the chicken flavoured cooking butter and oil for a gravy
