Pulled Pork # 1

The world went nuts for pulled pork, didn't it? Wow. Suddenly everything was trying to be pulled! Chicken, beef, rabbit... even fish!

As you can see, I've got more than one version for pulled pork but this is th classic/traditional version. Do try it with root beer though. It's lovely.

Ingredients

  • Per kilo of pork:
  • 2 sliced onions
  • 3 cloves garlic crushed
  • I tsp chilli flakes or use a whole red chilli (chopped finely)
  • 1 tsp mustard (hot)
  • Salt n Pepper
  • 75 mls white wine vinegar
  • 125 mls of bitter or a cider or root beer
  • 100mls bourbon (optional)

    Method

    Coat the pork joint in the chilli, mustard and season and let sit for about an hour at room temperature

    Put pork in pan/slow cooker and pour over the liquids and then add the onion and garlic

    Cover with parchment paper and then add the lid on top.

    Cook for 4 hours at about 160 in the over or for 6 hours medium in a slow cooker

    Take off the parchment and roast again for about another hour. If using a slow cooker, remove the lid.

    I usually finish off the pork with some flamed off bourbon and then pull it apart in the liquid.
