Nettle Soup

Nettle Soup

I’ll let you into a little secret. Sometimes when I’m foraging nettles to make this soup I feel like I’m Bear Grylls. OK. Honestly though; this is a beauty of a soup and is so cheap and simple to make and tastes amazing

You know that old adage of “When life gives you lemons?” Well when nature gives me Nettles; I make Nettle Soup

Ingredients

  • 50g butter
  • 1 large onion, finely chopped
  • 1 large potato, peeled and diced
  • 1 large carrot, peeled and diced
  • 1 litre chicken or vegetable stock
  • 500g nettles, washed and cleaned
  • salt and pepper to taste

    Method

    Add the butter to a sauce pan over a medium heat. When melted, add in the onion and begin to soften for 5 minutes

    Add the potato and carrot to the pan and begin to fry them off with the onions for a few more minutes

    Now add the stock (your choice of chicken or vegetable) and bring the pan to the boil before reducing back to a simmer. Cover the pan and leave to cook for 10 minutes or until he potato is tender and cooked

    Now add the washed and cleaned nettle leaves to the pan and cook these for about two minutes

    When done, remove the soup from the heat and either use a hand blender to blitz the soup or add the soup to a blender. Pulse until smooth

    To retain that green colour we need to chill this soup quick! I usually fill a sink with cold water and transfer the soup from the blender into a clean bowl and pop the clean bowl into the sink

    When ready to serve, warm the soup back up in a pan and season to taste
