This Miso Cod dish is so simple to make as it just involves making a simple marinade and popping the dish into the oven. The colours and flavours really make this cod dish stand out
I’ve provided a few alternative ingredients in here as well but if possible I’d recommend always using the main one as it’ll taste more like the traditional dish
In a bowl, mix together the miso, rice wine, soy sauce, sesame oil, garlic, ginger, sugar and rice vinegar in a small bowl
Place the cod fillets in a shallow dish and pour over the contents of the bowl. Seal and store in the fridge for a few hours to marinate
Preheat the oven to 200 C
Remove the fish from the shallow dish and reserve the marinade
Place the cod on a lined baking tray and place in the oven for about 10-12 minutes until the cod is cooked
Take the reserved marinade and pour into a small saucepan and reduce on a medium heat to thicken
When the cod is done, remove from the oven and baste with the reduced marinade
Serve immediately with a sprinkling of chopped onion and coriander
I like to serve it with simple white rice and some Pak choi
