A posset is a very simple thing. It only has three ingredients but when those ingredients come together they produce a delightful and light pudding and it takes minutes to make

You can try and use different fruit to make the posset such as oranges, strawberries and cherries. It’s a versatile little recipe


  • 750 mls double cream
  • 200g caster sugar
  • 3 lemons, juiced (about 150 mls)
  • Pinch of ground ginger (to decorate)


    It really is this simple. Put a saucepan over a medium heat and add the double cream and sugar. Bring these to a boil and keep it boiling for 3 minutes. Stir in the lemon juice and remove from the heat. Done

    Pour into serving glasses and pop it into the fridge to set for at least 5 hours

    Add a pinch of ground ginger over the tops just before serving
