Couscous, bland isn't it?

Not when you add fresh herbs, salted butter and a good chicken stock. These simple additions really give it some lift


  • 200g couscous
  • 50g salted butter
  • 350ml chicken stock , boiling
  • ½ bunch coriander , chopped
  • ½ bunch parsley , chopped


    To make the couscous put in a bowl with the butter and some seasoning. Pour over the hot chicken stock and cover with cling film.

    Leave for 10 minutes.

    Stir the herbs through before serving
