I know. I know. You could simply use an off the shelf Cajun seasoning mix and save yourself about 5 minutes effort of preparation and I won’t judge you if you do. I do it sometimes as well.
This is worth that 5 minutes effort though as the chicken is marinated properly and the spices and flavours come alive and you’ll know the difference
Firstly make the marinade and start by chopping the garlic and grating the onion. Add these into a large enough bowl to contain liquids and chicken.
Measure out the remaining dry ingredients and add to the onion mix.
Measure out the liquids and pour into the bowl and bring all together
Butterfly the chicken breasts and then place into the bowl and cover with the marinade. Cling film the bowl and leave in the fridge overnight
When ready to BBQ you need to make sure that the area you’ll cook on has a medium heat so shift coals about before placing the chicken on the grill and closing the lid
After about 10 minutes, turn the chicken breast over, re-glaze with the marinade and leave to cook once again for another 10 minutes or until done
Serve and enjoy and if you made the effort; Good on you (in a non-judgemental manner of course)
