Bakwed Boursin Potatoes

Baked Boursin Potatoes

Baked Boursin Potatoes are an amazing comfort food to eat and to help keep you warm and filled up during Bonfire Night.

I prefer the standard garlic based Boursin but feel free to use your favourite

Ingredients

  • 4 large Baking Potatoes
  • 1 Tbsp Oil
  • 1 Tbsp Sea Salt
  • 2 Tbsp Milk
  • 25g Butter
  • 150g Boursin
  • Cheddar Cheese, grated
  • Seasoning

    Method

    Preheat the oven to 180 degrees Centigrade

    Prick the potato and then roll it around in salt and oil

    Bake in the oven for 2 hours to get a really crispy skin and then remove from the oven

    Using a tea towel, cut the baked potatoes in half, length ways and scrape the potato into a bowl. Try not to crack/tear the skin when scraping.

    Add the milk, butter and Boursin and mix together to a mash consistency

    Spoon the mix back into the shells and then cover with grated Cheddar Cheese

    You can pop these into the fridge until you’re about ready to serve

    Heat the oven to 180 degrees centigrade, pop into the oven for 20 minutes until piping hot and serve.
