Avocado and Mixed Leaf Salad

Are avocados still around? As I write this recipe we are at the start of the Great Avocado Crisis of 2017* so if you are reading this in the future and they are extinct (or pricier than gold)… Avocados were amazing

It’s a simple and traditional salad and it takes minutes to make and I guarantee that you won’t have any leftover

* In my mind, it was a thing

Ingredients

  • 1 tbsp lemon juice
  • pinch of salt
  • 4 tbsp olive oil
  • small bunch finely chopped chives
  • 200g bag mixed salad leaves
  • 2 sliced, ripe avocados

    Method

    Just a word of warning, avocado related injuries are on the increase (I'm not even making this up...) so be careful.

    Squeeze lemon juice into a small bowl with a pinch of salt. Pour in the olive oil and finely chopped chives and give a really good mix to combine. To serve, toss with 200g bag mixed salad leaves and 2 sliced ripe avocados.
